Hi, roughly 6-12 weeks. this is very vague and of course depends on things like specific project requirements, party wall agreements, building control, etc, etc

Rogue plumbing emergency traders

It's not fair to say that at all. most of the plumbers i know who provide emergency plumbing or operate "out of hours" are genuine and very decent. providing more information about the situation would be beneficial.

Thermostatic bath shower mixer taps

It wouldn't make the slightest difference from a plumbing perspective. you may experience some discomfort while getting used to the new setup however by turning the 'wrong' tap
