Turning off tap using screw under sink?

Hi there, im just wondering is it OK to turn the hot water kitchen tap off by the shut off screw/valve under the sink for a couple of days ?

It would be ok for a time but the valve will become faulty with over use and start leaking around the "screwdriver" part.

Yes that will be fine

Yes, that's their intended purpose. Service valves.
