I would use a 10mm trowel and yes you can cut around the kitchen units.some people like wall to wall tiling but it’s your preference
Yes your right it would be a nightmare. i would firstly check original tiles are solid.then use an app primer,latex the floor then re tile on top of latex.you would have to survey your floor heights as this would increase by around 10 to 20mm depending on your new tile thickness
I would batten the roof top out then use a nice thick cement board and then tile onto this or you could use a pedal stool system.you can find plenty of these ideas on google.try rhino pedal stools
