Laminate over ceramic tiles - damp proof

Personally i would use a damp proof membrane (dpm) otop of the tiles underneath the underlay to prevent any rising damp reaching the underlay and laminate flooring a thick polythene is all that you would require ,it you have adequate airflow and ventilation condensation shouldn't cause any issues

Sink removal

When removing the sink you can cap the pipes very easily either a full cap or a ball valve with a cap , my option would be a lever valve on the cold supply with a flexible hose so you can turn the mains back on and also a water supply in the room for your plasterer
