Your are not wrong. you are not ment to grout the same day unless you use a rapid adhesive and give the recommended drying time. the tiler has gave you a price for job completion so if it takes longer than expected his quote was not the best to start with some areas do take longer than others but that was ment to be assessed before quote was given
I would remove while wet as it can tend to peel once dry maybe try cutting in first with out the tape and tape the final coat so your only taping once i tend not to use tape for skirtings be patient take your time with a steady hand and you can get perfect results
