A good background on your situation but not enough for a tiler to comment. we always grout 24 hrs after tiling, but it depends on your substrate. tubs are rarely used unless solo on herringbone above counters. as regards demanding additional monies i would stick to your guns if its included in their quote. the fear of course is losing the trade.
