plaster rotten above open fire place

If you touch the wall above an open fire place (rarely used), the wall feels soft. I think the plaster has blown and it just needs the plaster removing and redoing.
There is also a stone hearth, surround and shelf surrounding the fire place. I think all but the heath probably needs removing too and plastering behind. We could remove the surround brickwork and shelf, but I would appreciate if you could quote me both with and without you doing the removal.
