Answers:
No do not use plastic pipe directly into a press fitting, you can just put a small stab of copper and then use a push fit coupling to convert.
It is most likely to be a damaged rubber seal somewhere on your dhw system/ check flexible hose connections etc.
The problem could be something simple, and only require a fixed call out charge £60.00 or it could be poorly installed pipe work rubbing on joists which would require investigation work
