History:
New to working on myworkman so whilst there are not many reviews, They do average 5* & 100% so must be doing something right!
Specialising in fires & cookers as gas engineers in general chase big money in the boilers and neglect to take care of other appliances, where as I will always have availability if the fire or cooker has taken a turn for the worst!
Not currently installing boilers so any advice in regards to boilers is not to upsell a new one and can be taken as the truth!

Best get a service, if it still passes tests, keep and run it into the ground
if it fails to meet heat input and the gas valve adjustment does nothing then its more cost effective to change it
In theory yes, you can disconnect the bayonet from the cooker bayonet socket, however its more for cleaning and not to permanently remove, strongly advise to get a gas engineer to disconnect and test for gas tightness socket could potentially leak
Yes, a service is just to test the boiler is safe efficient and not dangerous, if a part is broken then you should be charged for the time (labour) it takes to change a part, very rarely is a boiler part a straight swap its all interlinked with numerous parts needing removed to change, and once a part has been changed all the service tests must be done again to ensure disturbing the boiler hasn't affected it in any way
Depends on what it means by turn off, if the gas doesnt stop when the hob goes out thats a failed ffd which is id
however a broken knob is easily fixed i'd geta breakdown engineer out to look and see ifit can be repaired
Shouldnt really be ever have pipe going up in size then back down should upgrade the whole run then down to the right size into boiler if anything but thats it
