No don’t use pva, sbr is best or a tiling primer and i wouldn’t tile on mdf to be honest, use cement board where possible
I would have priced for 2 days and this is plenty of time, walls would be done on the first day then use rapid set adhesive for floor on 2nd day then grout it all, hope this helps.
i would go careful as if i personally made a mistake on pricing then it’s my fault and i take the hit he obviously sounds like he’s trying to get what he can.

Bonding is soft so possible to scrape the 2mm back to skim but if wall is not that big an area and budget allows i would just get the wall skimmed
