If its artex then yes, and if its textured paint then yes, however woodchip is very specific, i would investigate thoroughly to make sure it's not paper, i have seen ceilings that have been papered
I personally would just get some cheap 22mm lagging and insulate any outside pipes and the taps, turning off the stopcock won't necessarily stop the outside aspect of the pipework and taps from freezing
It depends if there is enough room to access the soil stack with more than one coupling
No, electric showers must be mains connected.
If i'm to understand this correctly the socket back boxes are now protruding out past the level of the new wall, there's a possibility of chasing the back boxes further into the wall, however with lathe and plaster this may be tricky as the back boxes may be fixed to the timber studs.... i'd recommend you consult an electrician to see if the can reposition the back boxes
